Easy-to-Make Eggless Carrot Muffins Recipe
Perfect for a Quick Snack
Are you on the lookout for a delectable treat that's not only scrumptious but also healthy? Look no further than these eggless carrot muffins! They're a fantastic alternative to traditional muffins because they're chock-full of nutritious ingredients like carrots, walnuts, and whole wheat flour. Plus, they're super easy to make!
To start, preheat your oven to 350 degrees Fahrenheit and grease a muffin tin with cooking spray. Then, in a mixing bowl, combine your dry ingredients: one and a half cups of whole wheat flour, a teaspoon of baking powder, a teaspoon of baking soda, and a teaspoon of ground cinnamon. Mix well and set aside.
Next, in a separate mixing bowl, combine your wet ingredients: three-quarters of a cup of brown sugar, a third of a cup of vegetable oil, one cup of unsweetened applesauce, and a teaspoon of vanilla extract. Whisk until smooth and creamy.
Then, gradually stir in your dry ingredients until the batter is well combined. Fold in one and a half cups of grated carrots and half a cup of chopped walnuts.
Scoop the batter into your muffin tin, filling each cup about two-thirds of the way full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool for a few minutes before removing them from the tin and transferring them to a wire rack to cool completely. Once they're cooled, enjoy them as a tasty and healthy snack or breakfast treat!
