Sure, here's a recipe for Indian-style spinach pasta sauce:
Ingredients:
- 2 cups spinach leaves, chopped
- 1 large onion, finely chopped
- 4-5 garlic cloves, minced
- 1 tsp ginger paste
- 2-3 green chillies, chopped
- 2 large tomatoes, chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- Salt to taste
- 2 tbsp oil
- 1/4 cup heavy cream (optional)
- Cooked pasta of your choice
Instructions:
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn translucent.
- Add minced garlic, ginger paste, and green chillies. Sauté for another minute.
- Add chopped tomatoes and cook until they turn mushy.
- Add coriander powder, garam masala, turmeric powder, red chilli powder, and salt to taste. Mix well and cook for 2-3 minutes.
- Add chopped spinach and mix well. Cook until the spinach wilts and the mixture thickens.
- Let the mixture cool down a bit, and then blend it in a blender or use an immersion blender to make a smooth puree.
- Pour the puree back into the pan and heat it over low heat.
- Add heavy cream (if using) and mix well.
- Serve the sauce over cooked pasta of your choice.
