Harissa and Feta Recipe

Sure, here's a recipe for Indian-style spicy prawn (shrimp) pasta with harissa and feta:


Ingredients:

  • 250g linguine pasta
  • 300g prawns (shrimp), peeled and deveined
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 teaspoons harissa paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon red chilli flakes
  • 1 can of chopped tomatoes
  • 50g feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Chopped fresh coriander (cilantro), for garnish


Instructions:

  1. Cook the pasta according to the instructions on the packet. Drain and set aside.
  2. Heat the olive oil in a large frying pan over medium heat. Add the onions and sauté until they are soft and translucent.
  3. Add the garlic, harissa paste, cumin powder, coriander powder, turmeric powder, smoked paprika and red chilli flakes. Cook for 1-2 minutes, stirring constantly.
  4. Add the chopped tomatoes and season with salt and black pepper. Bring to a simmer and cook for 10 minutes, or until the sauce has thickened.
  5. Add the prawns to the pan and cook for 2-3 minutes, or until they are pink and cooked through.
  6. Add the cooked pasta to the pan and toss until it is coated in the sauce.
  7. Serve the pasta in bowls, topped with crumbled feta cheese and chopped fresh coriander.
