Ingredients:
- 3 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/4 tsp red stew powder (or to taste)
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt, to taste
- 2 tbsp vegetable oil
Instructions:
- Add the chopped onion and garlic, and sauté until the onion is translucent and the garlic is fragrant.
- Cook for 5 minutes, stirring occasionally.
- Add the cumin powder, coriander powder, turmeric powder, and red chili powder to the pot, and stir to coat the potatoes evenly with the spices.
- Empty the vegetable stock into the pot and heat to the point of boiling. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the potatoes are soft and fully cooked.
- Use an immersion blender or transfer the soup to a blender to puree the soup until smooth and creamy.
- Return the pureed soup to the pot and mix in the weighty cream. Do not boil.
- Season the soup with salt to taste. Serve hot with your favorite toppings, such as croutons, chopped cilantro, or shredded cheese.
